Yummy leftovers made new.

Every week I find bits of leftovers that need a new life. I have noticed that I'm more interested in using what I have and try to create something yummy (hopefully) from what I have.

In the fridge I had:

- Spanish rice leftover from dinner this week

- 1/4 lb of bulk pork sausage

I cooked the pork sausage with a bit of olive oil and added red pepper flakes. Browned it a bit. Salt/Pepper. Dumped in the rice and let it settle with the sausage. Added a cup of frozen peas. Chopped some green onion and parsley. Sliced a half avocado. Dressed it up with a dollop of sour cream and a sprinkle of paprika. Delicious.
