Eat your greens

I love greens. All kinds of greens. I crave greens. Perhaps that means that I am deficient in some sort of vitamin.
Last week I had a craving for collard greens. I don't make collard greens, usually. When I see collards on a menu, I order up. But, as we all know, eating out is no longer in fashion.
If you want it, make it yourself.
I bought two bunches of collards. Stripped them from the tough stem. Chopped them. Rinsed them very very well.

Pulled out the dutch oven, chopped up 4 slices of bacon, and cooked them until crisp. Chopped an onion. Cooked it in the bacon grease. Added a half teaspoon of red pepper flakes. YUM. 4-6 cups of chicken broth into the pot. Bring to a boil. Add a half cup of apple cider vinegar. Dump in the greens. Cook until soft - about 45 minutes.

This was the best bowl of greens. I seriously licked the bowl. Should have made cornbread.
