So much chicken.

I got two chickens from Costco. The birds are big. Like a small turkey. I cooked one - to make stock for the Chicken and Dumplings. We ate only a small portion of the meat with that meal, leaving me two bags of white meat and a container of dark meat. So I made chicken salad at 5:30 am.


I usually wake up thinking about what I want to cook. I lay in bed considering my options - what's in the fridge, what NEEDS to be eaten (Chicken, damn it), and how I will proceed.

Today will be a long day. And it will be warm. I want to come home from work, pour myself a glass of wine and have dinner ready to go.


For me, chicken salad is assembly cooking. Chop, dump, dress. In the bowl went the chopped chicken (not too fine - you want to see that it is chicken), celery (I use the inner tender stalks along with the leaves), parsley, green onion. The dressing is a mix of mayo and sour cream - about 50/50 or to taste. Today I added a generous amount of curry powder. Mixed it all together. Before serving it tonight, I'll add some toasted sliced almonds.


Popovers are also on the menu. I have trouble with my popovers. And tonight was yet another epic fail. Yes, I pre-heated the oven (for 45 minutes and checked the oven thermometer), had a batter at room temp. I think it was an under bake situation. This weekend I am working on perfecting my popovers.
