Pizza pizza

Before the pandemic, pizza was a Friday night thing. Cocktails and pizza. Glorious toppings. Pizza dough from Zupans. It's a new reality. Wednesday night is now a pizza night and the dough is from me, not Zupans.

I asked for a pizza dough recipe from Pat (of salad dressing fame). It's a quick one hour rise and created in the food processor. There are a zillion pizza dough recipes online so take a look or let me know if you want me to post Pat's tested and modified recipe. I'm hoping that is OK with her....

We like a thin crust pizza. I also like it with a bit of polenta sprinkled on the pizza pan on top of a brush of olive oil. Yummy crisp crust. One recipe = two pizzas for us.

Pizza sauce? I buy it in a jar - Rao's is a favorite. Use it sparingly. Otherwise, yucky soggy pizza. I portion out the rest in small ziplocks and freeze it. I can pull out just enough pizza sauce and not waste it.


Now with no one to share, we end up with pizza leftovers. Pizza for breakfast?
