I love eggs. I mean really love eggs. Poached, scrambled, soft and hard boiled. Incredible, edible eggs.
Today I had a lot of coffee for breakfast and a piece of toast around 9 am. By noon, I needed something and a break from Zoom calls and emails. Hello omelette.
Just eggs, herbs, and some chopped ham. Turn of black pepper. Yes.
Never brown the egg (eek!). Shake the pan while the egg is cooking. Sprinkle the chopped herbs (parsely and fresh thyme) all over the just setting eggs.
It should be soft in the middle. This is a lunch worth stopping all the noise in the world for and savoring. Yum.
Add extra sharp Tillamook cheese and you have perfection
