Fried Rice. Nice

I will never profess to be a great cook of anything Asian. I'm lucky to have a daughter-in-law that is an amazing cook, including Chinese food. Fried rice is a great left over meal. I made rice over the weekend to serve with a beautiful piece of halibut and had about 3 cups left to sit in the fridge. I cut up one chicken breast into small cubes. Marinated it in a mix of 2 Tbs soy sauce, 1 Tbs sesame oil, 1 tsp cornstarch, and 1 tsp baking soda. The baking soda tenderizes the chicken. Scramble two eggs and set aside. Thaw some peas and carrots - if you don't have the frozen combo, cut up a carrot and parboil it. Combine with some thawed frozen peas. Heat a skillet (I don't have a wok, so I use my largest non-stick) with a couple tablespoons of canola oil. Cook the chicken until done. Set aside. Add a bit more oil to the pan and cook the egg. Set aside with the chicken. Add another bit of oil to the pan and add the rice in a single layer. Let it settle for a bit and sizzle. Drizzle a tablespoon or a bit more of soy sauce and a tablespoon of sesame oil over the rice. Wait...wait. then stir it all about. Add the veg. Stir. Add the chicken and egg. Stir about. Add a couple of sliced green onions at the very end. Sprinkle sesame seeds. Eat. Yum.
