Earlier this week I made a corned beef. It was not on St. Patricks Day. Maybe Wednesday. I served it with roasted carrots and steamed potatoes. Of course there were left overs since I'm only cooking for two rather than having people over for dinner.

Tonight I made corned beef hash. I sautéed onions and red bell pepper until soft, then added the cooked, cold potatoes that I chopped into nice little chunks. After that got all browned and yummy, I added the chopped corned beef, and let it render into the potatoes and onions. Added some grinds of pepper and then some chopped parsley. Topped with a fried egg. Best not to chop things too small. It's hash, not mush. HP sauce on the side. Delish.
