For Mother's Day, I received a five-pound pork shoulder. Thank you, Katie.

I've made a lot of carnitas, pineapple pork, shredded pork for tacos. Blah blah. I found a recipe for Chile Verde and it had a lot of great ingredients - like four kinds of chiles and tomatillos. Off to the store I went. Chiles? Check. Tomatillos? Four of the saddest, smallest ones I ever have seen.

In the "before" days, I would just head to another store to augment my purchase. But not now. It's all "use what you have...improvise...be creative." So I went to the canned sauces aisle at Whole Foods and bought a small can of Chile Verde sauce. Ridiculous, right?

In my head, I thought, "Add a can to augment what I have." So I did. End result. Delicious.

Here's the recipe that I used. Apologies for all the damn pop up ads.
