Mmmmm. Biscuits

I love biscuits. Smeared with jam. It's part of a favorite weekend breakfast. I don't know if the quarantine is getting to us, but I think these were some of the best I've made in a while.
3 cups flour
2 TB baking pounder (yes, tablespoons)
1 t salt
2 sticks frozen butter
1 c buttermilk
Preheat oven to 450°
In a food processor, add all the dry ingredients. Give it a pulse or two or three. Chop up the frozen butter into small cubes. Add to the flour mixture. Pulse until you get bits of butter. Dump the buttermilk and pulse until it comes together. It will be a shaggy mess. Dump onto a floured surface and pull it together. Fold it over onto itself 4-5 times creating layers. Shape into a rectangle. Using a 2" biscuit cutter, cut biscuits being sure not to turn the cutter. Reshape the dough using all the leftover bits until you have used it all.
Place the biscuits on a parchment or silpat lined baking sheet making sure that the biscuits touch each other - this helps them rise. Brush tops with a bit of buttermilk.
Bake for 15 minutes.
