The comfort of granola

Yes, this blog is supposed to be about what is changing about what we eat. But here's the thing - I am finding comfort in what has not changed and that is granola.
I have not been a long time granola maker. Peter likes it. We used to buy it in a box and thought it was fine. Then I looked at the ingredients on the box. Yuk. It's the easiest thing to make. I don't add the dried fruit to mine during the bake - later when we eat it. A jar of granola on the counter just makes me happy.
3 cups of old fashioned oats
1 1/2 cups of sliced almonds
1 1/2 cups of unsweetened coconut flakes
1/4 c flavorless oil (Canola)
1/4 c good honey
1/4 c good maple syrup
1/2 t salt
Mix the dry ingredients in a large bowl. Add the salt. Mix the wet ingredients and whisk to combine well. Add the liquid to the dry and mix really well. Spread on a rimmed sheet pan with either parchment or a silpat.
Bake at 350 degrees. At 10 minutes, turn the granola over and respread to a flat layer. Repeat for another 10 minutes and toss again. Keep an eye on the color. The sugars will burn if you don't keep a close eye. I like it at about 20-25 min.
Cool. Store in a jar.
