Oh my. These crackers.

I love a good nibble with a drink. A cheese plate is lovely. Anchovies on a rice cracker are even better. A deviled egg? Yes, please. But I really love these cheese wafers. Sort of like a cheese straw but better. They are crunchy crisp because they have Rice Krispies in them. I know - crazy. Even with my non-entertaining life these days, I still like the idea of a drink before dinner with a little something. We're not savages, are we?

They are quick to make and like cookies, you can keep the unbaked dough in the freezer when you just need something to pair with a drink.
My recipe is from Southern Living, a great reference for fun entertaining recipes and the occasional oddball.
Crisp Cheese Wafers
2 cups of shredded sharp (or extra sharp) cheddar (do it yourself, don't buy pre-shredded because they add an anti-caking agent and that is yucky)
1 stick of butter - softened
1 cup all-purpose flour
1/2 t cayenne pepper
1 t Worcestershire sauce
1/2 t salt
1 cup of rice cereal
Mix all ingredients except the rice cereal together in a bowl. Hands work best for this. Work it until all the flour is absorbed. Fold in the rice cereal.
Shape into 1 inch balls - I use a small ice cream scoop for this - and place on a baking sheet lined with parchment or a Silpat. Using a fork, flatten the balls leaving a crisscross pattern.
Bake for 15 min in a preheated 350° oven
If you have any left, store in an airtight container. You can crisp them up by placing them in a 350° oven for just a few minutes before serving if you like.
